In Padova, Lorenzo Fidora's winery has been cultivating vines for three generations, since 1974, following Demeter-certified biodynamic practices. It's a demanding approach that excludes synthetic products and places soil fertility at the heart of every choice, within the established terroirs of the Venetian province. The agricultural act here precedes and conditions every step of the winemaking process. Only two denominations, both `DOCG`, define their production. `Lison` is born from `Tai` grapes, yielding a classic Venetian white, expansive and savory; `Piave Malanotte` moves from `Raboso Piave`, a late-ripening and robust grape, towards a structured red destined for aging. The contrast between the two—the freshness of one, the backbone of the other—speaks of a forward-looking agriculture, designed to hand over the land intact to future generations. The winery does not open for visits, but its bottles remain the most direct way to understand this method of work.
