In Delebio, in the province of Sondrio, Az. Agr. Gavarot di Colli Enrico bases its work on the alpine altitude, which dictates the timing and forms of two protected cheeses here. The Valtellina Casera DOP is a semi-hard, partially skimmed cow's milk cheese, aged for seventy days within a consortium of seventy-seven municipalities. Alongside it is Bitto DOP, a cylinder of raw milk weighing between eight and twenty-five kilograms with a concave heel, produced only between June and September across a territory of eighty-seven mountain municipalities. The two denominations tell complementary stories of the same Valtellinese cheesemaking culture: on one hand, the continuous production and measured aging of Casera; on the other, the strict seasonality and alpine pasture production of Bitto, tied to the rhythm of summer at high altitudes. Together, they define the perimeter within which the company transforms mountain milk into product, balancing high-altitude grazing and aging, without one prevailing over the other. It is the mountain calendar, rather than a stylistic choice, that governs the entire production.
