In Santo Stefano Belbo, among the Cuneo hills that mark the border with the Asti area, Sergio Grimaldi cultivates vineyards within the Brachetto d'Acqui zone. The grape variety that gives the denomination its name—ancient, aromatic—is not limited here to just sweet spumante: alongside it, a passito and still reds are produced, while other native Piedmontese varieties complete the picture. It's a broader interpretation than usual of a name often reduced to a single typology. The denomination embraces twenty-six municipalities, and within this restricted perimeter, microclimate and soil become decisive variables: just a few slopes can change the alcohol content, with a minimum of eleven and a half percent alcohol serving as a threshold. Grimaldi's work lines up the possible expressions of Brachetto without forcing a single one. The estate opens its doors to visitors for direct tastings: it's worth a stop to taste, side-by-side, the spumante, the passito, and the still wines, and to understand from the glass how a single grape variety can change its register.
