In the vineyards of Marano di Valpolicella, on the hills of the Verona province, Francesco Vaona tends the family vines, inheriting a legacy that dates back to the 1950s. The La Giaretta winery operates within two DOCG denominations, both linked to the method that defines this area of Veneto: the grape drying (appassimento) method. The DOCG, in fact, indicates the strictest level of protection, which here binds grape varieties, yield, and aging. The first wine is Amarone della Valpolicella, obtained from Corvina Veronese, Corvinone, and Rondinella grapes left to dry before fermentation and aged for at least twenty-four months: a dry and concentrated red. The second is Recioto della Valpolicella, which, from the same dried grapes, retains its sugar, offered here in both sweet passito and sparkling versions. Both are born from the grapes of Valpolicella classica, the historic area of nineteen municipalities where appassimento is not a whim but the rule. The connection to the territory is entirely expressed through this gesture, repeated from generation to generation by the same family.
