Valtellina Casera DOP, partially skimmed, matures for at least 70 days and represents the most consistent offering from the farm; Bitto DOP, made from raw milk and shaped into a cylindrical form, remains a seasonal cheese, available only from June to September. The two denominations anchor the farm's practice to precise alpine territories, encompassing 77 and 87 municipalities in Lombardy, respectively. The difference between the two products is not one of catalog but of rhythm: one accompanies the entire year, while the other follows the alpine pasture calendar and the few weeks when summer milk allows for its production. Harmonizing these two timelines means adapting work to the pace of the mountains, accepting that the season, not demand, dictates what and when to produce.
