The production area spans 61 municipalities, one of the largest and most codified perimeters in southern olive cultivation, and it is within this regulated framework that the farm conducts its work. The resulting oil immediately declares its origin: a color shifting from green to gold, a balanced fruitiness where pungent and bitter notes don't dominate but hold each other in mutual tension.
