In San Pietro in Cariano, one of the key municipalities of Valpolicella Classica, Paolo Fornaser's winery produces the two major denominations of the Veronese territory. Both originate from the same grape blend — Corvina Veronese, Corvinone, and Rondinella — and the same appassimento technique, which dehydrates the grapes in a drying room (fruttaio) before pressing. This method yields a dry red of great structure, which rests for no less than two years before release, and its sweet version, obtained by interrupting the fermentation of residual sugars. Discipline is the hallmark of this winery: contained yields, rigorous selection of grapes destined for drying, and aging times respected vintage after vintage. The sweet version is presented both as a still passito wine and as a sparkling wine, expanding the range of a single raw material. The winery does not receive visitors, focusing its work on transformation within the protected Veronese zone, where appassimento remains the foundational gesture for every bottle.
