Monti Iblei DOP

In Chiaramonte Gulfi, a hilltop village in southeastern Sicily, Vincenzo and Ottavia Paternò cultivate the olive groves that supply the company's sole denomination: Monti Iblei DOP, a label extending across thirty-nine municipalities along the eponymous mountain range. The chosen cultivar is Tonda Iblea, a variety that finds its ideal environment on these slopes, consistently yielding fruit year after year. The result is an extra virgin olive oil with a medium-intense fruitiness, recognizable by the distinct green tomato note on the nose. But it's the subsoil that truly defines it: the limestone that characterizes the Iblei region imparts a clear, almost tactile mineral character to the oil, making it a product of its territory even more than of its variety. The company does not receive visitors, allowing the oil to speak for itself: a pressing that condenses, in a few drops, the encounter between Tonda Iblea and the white stone of the Ragusa plateau, without concessions to a domesticated taste. It is the liquid portrait of a hill.
