Here, Corvina Veronese, Corvinone, and Rondinella find their balance, and from this trio, the winery derives two opposite yet complementary expressions of the Veronese appassimento method. Amarone della Valpolicella undergoes a twenty-four-month aging process that enhances its power, with a minimum alcohol content of 14% serving as structure rather than mere exhibition. Recioto della Valpolicella, on the other hand, takes the path of sweetness, offered in both a passito (sweet wine from dried grapes) and a sparkling (spumante) version, showcasing the breadth a dried grape can contain. The two denominations thus tell the story of two facets of the same gesture: dry concentration and measured sweetness.
