Antonia Polignone works in San Nicandro Garganico, behind the Gargano, where the calcareous soils of the Foggiano area yield olives of marked character. Her Dauno DOP is an extra virgin olive oil that translates that terroir: color shifting from green to gold, measured fruitiness, a finish where pepper and bitterness remain delicate yet discernible. The denomination encompasses sixty-one municipalities in the province, and production is anchored to the parameters that define its identity and quality. This is not an oil built on intensity at all costs, but on balance: the bitter and spicy notes are present, calibrated, as is characteristic of Daunia's olive oil culture. The company does not open to the public, thus entrusting the product with the task of telling the story of its place — a fragment of Puglia's olive oil heritage, defined by the boundaries and criteria of Dauno DOP rather than by any narrative. Each bottle remains, ultimately, a portrait of Foggia's calcareous soil.
