From Negrar, in the hilly landscape of Valpolicella in Verona, Fiorenza Quintarelli's winery works with two denominations born from the same gesture: the drying of grapes. Amarone della Valpolicella DOCG starts with Corvina Veronese, Corvinone, and Rondinella and demands time — a high alcohol content and long months of aging — to transform the dehydrated fruit into a red wine of depth and balance. Alongside Amarone lives Recioto della Valpolicella DOCG, which follows the same drying path but stops earlier, retaining sugar in a passito of controlled sweetness and concentrated fruit. The two wines are two sides of a single idea of territory: the same grape, the same patient rest on drying racks, with opposite outcomes held together by the hand of the one who decides when to stop fermentation. Here, the denomination is not a formal constraint but a grammar, and Quintarelli interprets it with a rigor that has set a standard. The winery does not receive visitors, and its reticence is part of its story.
