In Peschici, on the Gargano promontory, Massimiliano Rando cultivates olive trees within the Dauno area, an olive oil denomination that extends across sixty-one municipalities in the province of Foggia. It is a northern strip of the Tavoliere, where the olive trees thrive near the sea, concentrating the character of this protected land in their fruit. The single denomination cultivated yields an extra virgin olive oil that changes its appearance with the season: from the vibrant green of the first pressing to the amber gold of a more advanced harvest. In every bottle, a recognizable profile returns, built on the balance between fruity notes, a peppery kick, and a subtle bitterness, the sensory signature of the area. It is not an oil to be ostentatiously displayed, but rather to be savored slowly, as it tells the story of a precise vintage and exposure. Rando's work remains anchored to this Gargano measure, without forcing, allowing the landscape to dictate the rhythm of the mill and the final physiognomy of the product.
