In the Ennese hills, among the five municipalities where the Pesca di Leonforte IGP finds its protected area, Giovanni Trovati's farm cultivates a fruit that ripens out of season, between September and November, when most peaches have already left the market stalls. Each peach grows inside a hand-tied bag on the tree, as required by the regulations: a shield that protects the skin and concentrates the aroma without resorting to chemical defenses. Indeed, the farming eschews synthetic pesticides, relying instead on natural remedies and certified organic fertilizers, a choice reflected in the intense aroma and delicate pulp that the fruit retains until it reaches the table. This is an agriculture of patience, measured by the long ripening times of a late variety and by a manual gesture repeated plant by plant.
