On the steep slopes of Mezzane di Sotto, where olive groves and vineyards vie for space, Mirko Sella founded his winery in 2002, picking up the agricultural thread that his grandfather Albino had started in 1957. Two denominations define his work, both at the pinnacle of Valpolicella and linked to the *appassimento* technique. The Amarone della Valpolicella DOCG and the Recioto della Valpolicella DOCG are born from the same grapes—Corvina Veronese, Corvinone, and Rondinella—but diverge in their outcome: the first is dry and powerful, over 14% alcohol after a minimum aging of twenty-four months; the second is sweet, an ancient memory of the territory from which Amarone itself descends. In this pairing, one can read the entire grammar of Veronese *appassimento* reds. The winery welcomes visitors for tastings and a direct exploration of the vineyards: the climb up here is well worth it to see where the concentration of these wines truly originates.
