In Cazzano di Tramigna, on the eastern slopes of Valpolicella, Az. Agr. San Giorgio di Bennati Paolo e Giorgio crafts the two most concentrated expressions of the territory: the Amarone della Valpolicella DOCG and the Recioto della Valpolicella DOCG. Both originate from the same ampelographic base—Corvina Veronese, Corvinone, and Rondinella—and the practice of *appassimento*, but they take opposite paths once in the cellar. Amarone presents itself as a structured red, with a minimum aging of 24 months and an alcohol content that does not fall below 14%: a dry wine built on patience. Recioto, on the other hand, retains the sweetness of the *passito* and is also available in a sparkling version, completing the circle between a meditation wine and a bubbly. The regulations governing winemaking apply to the 19 municipalities of the protected area, and the winery operates within them, interpreting a method—that of allowing grapes to rest until sugars and substance are concentrated—that alone defines the Veronese character of these reds.
