Az. Agr. Serrilli
San Marco in Lamis · Province of Foggia · Puglia
In San Marco in Lamis, on the Gargano side of Daunia, Az. Agr. Serrilli cultivates olive groves on the calcareous soils of the Foggia area, lands that impart a distinct character to the fruit. Their Dauno extra virgin olive oil reflects the typical profile of the denomination: green and more assertive in its youth, shifting towards warm gold with maturity, following a chromatic arc that also accompanies the evolution of its taste. In the glass, the oil reveals an herbaceous freshness and a delicately spicy finish, a measure of olives harvested at the perfect point in one of the sixty-one municipalities that make up this olive-growing territory in the South. It is a vast area, held together more by terroir and processing discipline than by administrative boundaries, and Serrilli's Dauno fits within this framework as a faithful interpretation rather than a deviation. The company is not open to the public: the oil remains, with its vegetal note and that final hint of spice, to tell the story of the calcareous Daunia from which it originates.
