Dauno DOP

From San Marco in Lamis, on the foothills of the Gargano, Andrea Serrilli produces extra virgin olive oil within the Dauno DOP denomination, a protected perimeter that extends over sixty-one municipalities in the Foggia area. It is one of the largest olive-growing basins in Southern Italy, and its oil translates its character: a fluid that shifts from green to yellow, marked by a clear fruitiness and a bitter and spicy finish, the sensory signature of local olives. In such a vast area, where the same DOP encompasses diverse landscapes and cultivars, Serrilli's work chooses to adhere to the standard that defines the Daunia identity, without pursuing aestheticisms. Consistency with the regulations thus becomes the way to let the terroir speak more than the producer: the bitterness and spiciness are not flaws to be smoothed out but indicators of freshness and polyphenols, the grammar by which this strip of northern Puglia is recognized in the glass and at the table.
