In Torremaggiore, in the province of Foggia, Az. Agr. Tancredi Antonio cultivates olive trees destined for Dauno DOP, one of Puglia's most codified olive oil denominations. The protected area encompasses sixty-one municipalities of the Tavoliere, where calcareous and clayey soils impart a distinct character to the oil: a color that shifts from pale green to gold, a peppery note on the palate, and a measured bitterness that compose the denomination's fruity signature. The work in the field and the mill aims to preserve this profile: harvesting at the right moment and careful pressing preserve the mineral and aromatic components required by the regulations. Dauno is not a generic oil but a system of rules that binds varieties, origin, and yield, and the company adheres to these as a measure of its work. The result is an extra virgin olive oil that tells the story of the Tavoliere for what it is: a vast and sunny plain, yet far from uniform in the palette of its oils, where each vintage reflects the nuances of its soil.
