In Grosotto, within the protected dairy heritage of Valtellina, Az. Agr. Turcatti di Turcatti Antonio works with two denominations of origin, both alpine cheeses with DOP status: Bitto and Valtellina Casera. It is on the latter that the most recognizable aspect of their production is concentrated — a semi-skimmed cow's milk cheese, aged for at least seventy days, which has defined the typicality of the province of Sondrio for decades. Its semi-hard paste carries with it the alpine origin of the milk and the technical precision of the cheesemaker, two credentials that the denomination considers indispensable and which extend to an area of seventy-seven municipalities distributed along the valley. Together with Bitto, Casera places the company within a mountain dairy system where aging and origin rules are as important as the daily act of transformation. Turcatti thus operates on a double DOP register that belongs entirely to the Valtellinese dairy identity, rooted in the relationship between pasture, altitude, and slow maturation.
