Below Sessa Aurunca, a tuff cellar excavated in the late 14th century operates on the slopes of the Roccamonfina volcano. Here, Azienda Agricola Volpara converted an amateur production into a profession in 2004, engaging with the Ager Falernus territory. The red wines are born from the encounter between Aglianico and Piedirosso, aged for at least twelve months until the smoky and mineral notes, which the volcanic soil imparts to the glass, emerge. The production range embraces five denominations from the Campanian plains: three DOCs—led by Falerno del Massico alongside Aversa and Galluccio—and two geographical indications, Terre del Volturno and Roccamonfina, which broaden the scope towards the more versatile grapes of the area. A coherent profile emerges, rooted in the same volcanic matrix but articulated in different registers, from immediate fruit to the more austere structure of reds for aging, where time in the cellar remains the measure of every production choice.
