In Gruaro, in eastern Veneto in the province of Venice, Paolo Ziliotto bases his work on two distinct northeastern denominations, differing in color and protocol. On one side are the white wines of Lison DOCG, founded on the Tai grape and other white grape varieties that the Venetian terroir favors. On the other side are the red wines of Piave Malanotte DOCG, based on Raboso, a grape variety that demands long aging: thirty-six months of refinement before the bottle reaches the market. This dual approach—the freshness of the white and the austerity of a long-aging red—defines the company's identity, which accepts the rigorous constraints of the two denominations as part of its commitment to quality. In the Venetian wine landscape, where very different styles coexist, Ziliotto chooses to oversee two extremes rather than a single stylistic approach, making it a hallmark of work attentive to both the grape variety and its timing.
