In the Valpolicella Classica, specifically in San Pietro in Cariano, Corte Saibante bears the name of a family who, under the Venetian Republic, owned lands and farmhouses in these hills. This land legacy still anchors the winery to the territory today, and from there, their work focuses on two sister denominations, Amarone and Recioto della Valpolicella, both DOCG and born from the appassimento of grapes. The wines originate from the same base—Corvina Veronese, Corvinone, and Rondinella—but take opposite paths: the Amarone, dry and profound, aged for a long time, and the Recioto, sweet and velvety, also offered in a sparkling version. It's the classic diptych of Valpolicella, where the same dried grapes choose either sugar or its absence. Visitors to San Pietro in Cariano can taste them side by side, grasping in a single sip how the contrast between a meditation red and its sweet counterpart comes to life.
