In Fumane, on the slopes of Valpolicella, Crosarola cultivates Corvina, Rondinella, and the complementary red grapes that are the signature of this Veronese valley. From here, two DOCG denominations emerge, sharing the same grapes but telling opposite stories. The Amarone della Valpolicella is born from dried bunches, ages for at least 24 months, and exceeds 14% alcohol, building power and complexity; the Recioto della Valpolicella, on the other hand, retains the grape's sugar and becomes a sweet wine, offered in both passito and sparkling versions. This pairing beautifully illustrates the character of the territory: the same raw material, appassimento as a common technique, leading to two outcomes that sit at opposite ends of the taste spectrum, from an austere red to a meditation sweet wine. It's a diptych best understood up close, by following the journey from fresh grapes to the drying rooms and then to the cellar. This is why a visit makes sense: the winery opens its doors for tastings and guided tours, where the difference between Amarone and Recioto ceases to be a regulatory definition and becomes something to be savored.
