From Monte Sant'Urbano, above Marano di Valpolicella, Luigi Filippini's winery overlooks the slopes of Valpolicella Classica from a hilly position that has guided the choices of more than one generation. It is a family business that has grown through successive layers, where vineyard work is handed down along with the craft of appassimento. Only two denominations, both DOCG, define its repertoire: Amarone della Valpolicella and Recioto, one dry and the other sweet, born from the same trio of grapes—Corvina Veronese, Corvinone, and Rondinella—and the same process of allowing the bunches to rest until water gives way to concentration. In the drying room, the grapes lose weight and gain density for months, and it is here that the two wines diverge in the glass despite sharing a common origin. Visitors to the cellar can enter the drying room during tastings and observe the grapes undergoing appassimento: book in the autumn, when the drying racks are full and the technique can be seen with the eyes even before it is tasted in the glass.
