Between San Pietro, Fumane, and Traversagna, Az. Agricola Flatio di Fraccaroli Flavio manages eight hectares cultivated with the Veronese pergola system, the traditional method that supports the Corvina and Rondinella vines. Olive and cherry trees border the vineyards, rooting the winery in the Valpolicella landscape even before its wine. The two denominations on its labels share origin and technique: Amarone della Valpolicella and Recioto della Valpolicella, both DOCG, are born from the same grapes, hand-harvested and selected in September, then entrusted to the appassimento method which concentrates sugars and aromas. Twenty-four months of aging translate that concentration into precise wines, where the mineral component stands up to the power—one dry and austere, the other sweet by vocation. It is a diptych that tells two possible destinies of the same grape bunch. The winery is open for visits: stopping here means seeing up close how appassimento separates the path of Amarone from that of Recioto.
