On the slopes of Monteforte d'Alpone, on the Veronese side of Valpolicella, Gini Sandro e Claudio cultivate Corvina and Rondinella in the conditions these grape varieties prefer. From here, two denominations are born that share the same root — the appassimento of grapes — but yield opposite results: Amarone della Valpolicella DOCG, dry and powerful, and Recioto della Valpolicella DOCG, its sweet counterpart. Amarone emerges from a twenty-four-month aging cycle, the time necessary to build the depth the wine demands, and from a minimum alcohol content of fourteen percent that captures the intensity of the dried grapes' fermentation. It is the austere hallmark of the valley, where the standard is not a bureaucratic constraint but the very form of its character. The winery welcomes visitors for tastings and for direct contact with winemaking rooted in these rules: it is worth crossing the threshold to understand, glass after glass, how the same dried grape can become both dry and sweet.
