It is a semi-cooked cheese born from alpine cheesemaking, the kind that transforms mountain pasture into a stable and recognizable product. Each wheel weighs between eight and twelve kilograms and bears the memory of the place even before its taste. The aging, never less than forty-five days, is the time during which the rind takes on its straw-yellow color and the paste develops that delicate profile that distinguishes the cheesemaking of the high Brembana altitudes. Erich Giupponi oversees this single denomination with precise cheesemaking, where nothing is left to improvisation: the cheese yield depends as much on the territory's identity as on the hand that shapes it.
