From this trio of indigenous grapes, the winery produces two DOCG expressions representing the opposite poles of the area: Amarone, dry and powerful, and Recioto, which retains its original sweetness. Both are born from the appassimento of grapes, a technique that concentrates sugars and aromas before vinification. Amarone requires at least twenty-four months of aging to build structure and complexity, exceeding fourteen percent alcohol; Recioto, on the other hand, is offered in both passito and spumante versions, seeking balance between residual sugar and acidity. Behind the two labels is the same meticulous work: precise selection of grapes destined for the fruttaio (drying loft) and extended aging protocols, extending timelines well beyond the harvest. By focusing on these two denominations alone, the producer foregoes variety to delve deeper into appassimento as a distinctive hallmark, measuring its voice across the two extremes — dry and sweet — of a single Venetian tradition.
