In Fumane, one of the nineteen municipalities of Valpolicella, I Scriani, led by Stefano Cottini and partners, oversees the entire production chain, from vineyard to cellar, without delegating the steps that define its style. The foundation remains the classic trio of the area — Corvina Veronese, Corvinone, and Rondinella — from which two DOCG wines are derived, linked by appassimento but diverging in outcome: Amarone, dry and powerful, and Recioto, its sweet counterpart. Amarone ages for no less than twenty-four months and exceeds fourteen percent alcohol, time and substance that give it the structured texture and dark fruit aromas required by the denomination; Recioto, on the other hand, retains the sugar of the dried grapes, completing the circle on the same grape variety interpreted in reverse. It's a diptych that tells the story of Valpolicella in its foundational ambivalence, between austerity and sweetness. The winery welcomes visitors and enthusiasts: a stop in Fumane allows for on-site tasting of the selection and to grasp, from the same counter, how appassimento can lead to two such different wines.
