In Caprino Veronese, on the hills of eastern Valpolicella, Az. Agricola Monte Zovo di Cottini Diego e Figli focuses its work on two expressions from dried grapes, both DOCG. The Amarone is born from Corvina Veronese, Corvinone, and Rondinella grapes and undergoes at least twenty-four months of aging before reaching the prescribed fourteen alcohol degrees, gaining depth over time. The Recioto shares the same varietal base but retains the sweetness of the overripe fruit, completing the circle of a singular wine idea. The character of these bottles owes much to the continental microclimates of the area and the slate-rich soils, which impart mineral tension and structure.
