Based in Soave, in the Verona area, Az. Agricola Montetondo cultivates volcanic soils swept by alpine winds, conditions that impart a distinct character to its wines. Its production focuses on two Valpolicella DOCG wines, both united by the technique of appassimento: Amarone and Recioto. For Amarone, Corvina and Rondinella grapes are left to dry and then age for at least twenty-four months, developing the depth and alcohol content exceeding fourteen percent that are its signature. It is the same method — grapes left to dry before vinification — that also produces Recioto, another outcome of this denomination. Everything takes place within the protected area of nineteen municipalities, where appassimento and local expertise transform the fruit into highly concentrated red wines. The winery welcomes guests for tastings: it's worth a stop to taste the two faces of Valpolicella's appassimento on site and understand, glass in hand, how the same practice leads to such different results.
