At an altitude of 835 meters in Mezzoldo, Az. Agricola Salvini Juri oversees the upper Brembana Valley. Founded in 1998, this small family farm raises sixty cows of the Razza Bruna Alpina and Pezzata Rossa breeds, dividing the year between the winter stable and the spring transhumance to high-altitude pastures, between 1600 and 2000 meters, on Alpe Terzera. It is there that the alpine forage imparts its character to the milk, which is then processed into Formai de Mut dell'Alta Valle Brembana DOP: a semi-cooked cheese made from raw milk, with a minimum aging period of 45 days. Each wheel retains the delicate signature of the alpine pasture and a measured craftsmanship, where the vertical geography of the valley — altitudes, seasons, herd movements — can be read directly in the cheese paste. A product that exists only because that mountain and that cycle, stubbornly repeated season after season by a handful of animals, exist.
