Nestled in the Custoza hills of Sommacampagna, the Fasoli family cultivates Corvina Veronese, Corvinone, and Rondinella—the trio of grapes that give voice to Valpolicella. Founded in 1968 by Adriano Fasoli and now guided by his sons Stefano and Giuliano, the winery crafts two related denominations: Amarone della Valpolicella DOCG and Recioto della Valpolicella DOCG, both born from the traditional appassimento (grape drying) method. These two expressions are different facets of the same meticulous process: the Amarone rests for at least twenty-four months in the cellar to achieve the dry, powerful balance required by its regulations, while the Recioto is its sweet counterpart, where residual sugar testifies to the concentration of the dried grapes. It's a family-driven interpretation of the Veronese territory, built on three grape varieties and a technique passed down through generations. The winery welcomes visitors to explore its grounds: it's well worth a stop to taste the wines born on these hills directly from the family's hands, comparing the dry and sweet versions side-by-side.
