Az. Agricola Valentina Cubi

In Fumane, on the Valpolicella hills, Valentina Cubi's estate traces its roots back to a 1969 investment: an initial seven hectares that grew to ten, now distributed across prestigious crus like Monte Tenda, Monte Crosetta, and Rasso. Only two denominations, both DOCG, define its horizon: Amarone della Valpolicella and Recioto, the two outcomes of Veronese appassimento, one dry and powerful, the other sweet and velvety. The fundamental choice is certified organic farming, which governs every decision in the vineyard and cellar: only estate-grown grapes, hand-harvested and vinified with artisanal precision. Behind this lies Valentina's conviction that healthy soils produce superior wines and leave a more conscious legacy for future generations. Here, appassimento is not a showy technique but the way the landscape concentrates itself in the glass. The cellar welcomes visitors among the rows of the crus: it's worth a stop to understand, directly on site, how appassimento transforms grapes into Amarone and Recioto.
