In Marano di Valpolicella, in the hamlet of Valgatara, the Vaona family has been cultivating vines for generations with an artisanal touch. Under Alberto's guidance, the estate has restructured its cellar according to functional criteria that leverage natural gravity in the various processing phases, thus preserving the phenolic and sensory integrity of the grapes. However, the defining gesture of the house remains the appassimento on traditional racks, meticulously cared for and transformed into a distinctive hallmark of the project. The two cultivated denominations share this root: both DOCG, both born from grapes left to rest and concentrate. Amarone della Valpolicella translates that rest into a dry and powerful red, while Recioto della Valpolicella preserves the sweet vein of the passito, completing the circle of a viticulture that makes controlled dehydration its language. The result is a coherent diptych, where cellar technique and the wisdom of the drying racks go hand in hand, without succumbing to the shortcut of easy extraction.
