On the four hectares of Mazzano, in the Valpolicella Classica above Negrar, Claudio Viviani cultivates a vineyard that owes almost everything to its location: south-southeast exposure and altitudes between 350 and 450 meters, where constant ventilation and low humidity govern the slow process of appassimento. It is on that invisible drying room—Corvina Veronese, Corvinone, and Rondinella left to dehydrate—that the two foundational wines of the house rest. From these grapes come a red of long concentration and a sweet meditation wine, both at the apex of the Veronese pyramid: two interpretations of the same material, one dry and powerful, the other built on residual sugar. In the vineyard, Viviani intervenes with restraint, reducing synthetic inputs so that the plant finds its own balance; in the cellar, he combines contemporary tools with local memory, without forcing either the fruit or the ancient language of the area. The result is a faithful portrait of a precise corner of Valpolicella, rather than a style imposed from above.
