Az. Agricola Zanotti Diego
Negrar di Valpolicella · Province of Verona · Veneto
In Negrar, within Valpolicella Classica, Diego Zanotti's estate builds its reputation on two sister denominations: Amarone and Recioto della Valpolicella, both DOCG and born from the same process, the appassimento of the grapes. Corvina and Rondinella ripen on the hillside soils and then rest to dry, concentrating sugars and aromas before vinification: from there, the two outcomes diverge, the dry and powerful red of Amarone and the sweet version of Recioto. The work spans four family generations and remains firmly in direct hands. Diego and Morena oversee every phase with an in-house oenologist, from the vineyard to the bottle, without delegation. For Amarone, twenty-four months of aging translate the appassimento into a depth of dark cherry and a structure of rare concentration. This is an endeavor that rejects shortcuts: only two original labels, personally controlled at every step, which tell the story of Valpolicella not through the breadth of a catalog but through the consistency of a hand that never strays from the wine.
