Celestino Gaspari founded Zýmē in Valpolicella in 1999 with a clear intention: to oppose the uniformity that was flattening Veronese wine. The winery occupies an old sandstone quarry and focuses its work on two twin denominations, Amarone and Recioto della Valpolicella, both born from the appassimento (drying) of Corvina Veronese, Corvinone, and Rondinella grapes. The two paths diverge in the glass. Amarone matures for at least twenty-four months, building complexity through its slow evolution, while Recioto retains the sweetness of a passito wine and can also take a sparkling form, with at least twelve percent alcohol. In both, Gaspari prioritizes listening to the territory over intervention: the choice is to accompany the grapes rather than correct them, allowing the place to define the final result. Visitors to San Pietro in Cariano will find this philosophy made tangible within the stone walls of the winery, where a tour offers a direct understanding of the difference between these two wines.
