Based in Pedemonte, in the heart of Valpolicella Classica, Az. Vinicola Farina has been active in the Venetian wine scene for over a century. Its two denominations are the region's great *appassimento* red wines: Amarone della Valpolicella DOCG and Recioto della Valpolicella DOCG, both made from Corvina Veronese, Corvinone, and Rondinella grapes left to dry before vinification. The two wines follow parallel paths and distinct rules. Amarone requires at least twenty-four months of aging and reaches 14% alcohol, resulting in a dry and imposing wine; Recioto, in its *passito* and *spumante* versions, remains on the sweet side with a minimum of 12%. It is the same dried grapes that diverge into two opposite outcomes, dry and sweet. The winery opens its doors for tasting tours and to its Wine Boutique, where wines are paired with local gourmet products: a stop in Pedemonte allows visitors to taste Amarone and Recioto side by side and take a bottle home.
