In the Salerno area (Salernitano), Giovanni Aiello operates across five protected denominations that span the entire territorial scale: from circumscribed micro-zones—Castel San Lorenzo DOC and Cilento DOC—to the broader frameworks of IGT Colli di Salerno and Paestum. On the wine front, reds, whites, and rosés are crafted from Aglianico, Barbera, and Piedirosso, among others, in a range that combines regional rigor with varietal freedom. Completing the portfolio is Cilento DOP, an extra virgin olive oil with a greenish-yellow hue and a spicy note characteristic of the region: the fifth denomination, olive-oil based, complementing the four wine denominations without blending with them.
