Orazio Genovese's estate in Aquara brings together the two agri-food souls of southern Campania: oil and wine. On the olive oil front, they produce Cilento DOP, an extra virgin that captures the region's green-yellow chromatic spectrum and finishes with the typical peppery note of the territory. This chapter firmly anchors the company to the most recognizable Cilento, that of ancient olive trees. In the vineyard, the scope broadens to four denominations: the two DOCs of Cilento and Castel San Lorenzo, which lean towards more structured reds, and the two IGTs of Colli di Salerno and Paestum, a canvas for freer and lighter expressions. Operating across five protected registers — one for oil, four for wine — means traversing different typologies and altitudes while remaining within a single Salerno terroir. This is how producers in this province interpret a territory that demands versatility, between olive groves and vineyards, without losing the local identity in which both crops are deeply rooted.
