It is a single-municipality denomination, and its character also stems from a geological detail: the 'Sas de Luna,' the mineral element that the soil imparts each vintage. Manuele Biava works with a human-centric approach, rooted in local practice, and extracts two expressions from the grape variety—the red version and the passito—both aged for at least two years and exceeding seventeen percent alcohol. These are austere and concentrated wines, not seeking immediate pleasantness but rather the density of a tiny, vertical area. Here, the denomination almost coincides with a single hillside, and every bottle carries with it the confined scale and tenacity of its origin.
