Azienda Agricola Caruso Vincenzo

In Licodia Eubea, a village perched at the southeastern tip of Sicily, Vincenzo Caruso dedicates the farm bearing his name to a single denomination: Monti Iblei DOP, the extra virgin olive oil recognized across thirty-nine municipalities spread over the Iblean plateaus. It's a clear choice, foregoing variety to focus on the identity of a single product. The resulting oil bears the unmistakable signature of the territory: a medium-intensity fruitiness, imbued with the green tomato notes that characterize the indigenous cultivars of these hills. It is the varieties adapted to the calcareous soils of the plateaus that impart this distinctive note, even before the oil miller's touch. The result is an extra virgin olive oil that doesn't seek power for its own sake, but rather coherence with a landscape of stone and olive trees, where altitude and soil type define an aromatic profile recognizable within the broad Iblean area.
