At the far southeast of the Garda morainic amphitheater, in Sommacampagna, Azienda Agricola Cavalchina takes its name from the Veronese area once marked by the residence of Count Cavalchini. The viticultural vocation is documented since the 19th century: Austrian records from 1848 already note substantial vineyards, classified in the first two categories. The glacial soils impose a natural resistance to drought, a characteristic that accompanies this landscape even in its historical memory, with the obelisk commemorating the battle of 1866. Founded in the early 1900s with the acquisition of the first vineyard plots, Cavalchina today focuses its reputation on two Valpolicella DOCG wines: Amarone and Recioto, wines born from the appassimento of grapes, translating their concentration into opposite registers, one dry and the other sweet. These are the two denominations that define the winery's identity. Visitors to the property can walk through these morainic vineyards and personally grasp the link between glacial soil and wine: a tasting in the cellar remains the most direct opportunity to compare the two faces of these labels.
