From Vesime, on the edge of the Alta Langa where it has been rooted since 1556, Cavallero cultivates three Piedmontese DOCG denominations amidst woods and slopes. The three areas—Barbera d'Asti, Ruchè di Castagnole Monferrato, and Terre Alfieri—cover both red and white wines, grown on small crus that respect the wild morphology of the territory rather than forcing it. This is agriculture that starts from the shape of the hills, not from a technical sheet. These are frontier wines, both geographically and stylistically: the Barbera rests for at least four months, the Ruchè reaches 12.5% alcohol, and the Arneis from Terre Alfieri delivers the mineral character that the denomination requires. The winery opens its doors to those who wish to explore this margin between the slopes, and visits intertwine the story of individual wines with the family history preserved in the ancient archives of Vesime. Visitors here have the opportunity to understand a territory through those who have cultivated it for nearly five centuries, glass and document in hand.
