In Marano di Valpolicella, in the province of Verona, Azienda Agricola F.lli Degani cultivates vineyards that the family directly oversees, passing down winemaking from generation to generation with a constant presence among the rows. The work revolves around the area's indigenous grape varieties—Corvina, Corvinone, and Rondinella—cultivated within an area that unites nineteen Veronese municipalities. From these grapes, two related but distinct denominations are born: the Amarone della Valpolicella DOCG, dry and powerful, and the Recioto della Valpolicella DOCG, sweet, both resulting from the *appassimento* (drying) of the grapes after harvest. Harvesting remains manual, a choice that allows for the selection of bunches destined for resting in the *fruttaio* (drying room), where the concentration of sugars prepares wines of great substance. The result balances two requirements: respecting the strict specifications of the protected origin and reflecting the family's bond with their plants. This is an approach that doesn't chase trends but preserves a method—*appassimento*—which is Valpolicella's oldest and most recognizable signature.
