Azienda Agricola Francesco Currarino
In Levanto, where the Ligurian coast plunges towards the sea, Francesco Currarino's estate cultivates steep terraces overlooking the water. Here, the Taggiasca olive finds the brackish air and calcareous soils that are so congenial to it, and from this cultivar, extra virgin olive oils are produced under a single denomination, Riviera Ligure DOP, which extends across one hundred and eighty-six municipalities along the coastal arc. The character of the product reflects its origin: herbaceous, delicately fruity, with the intrinsic sweetness typical of Taggiasca. Each harvest imposes the constraints of coastal cultivation, where machinery cannot reach: cultivation is done by hand on the slopes, followed by careful milling designed not to disperse the oil's most fragile volatile aromas. It is a labor that does not pursue volume but rather fidelity to the terrain, where the steepness of the land and the proximity of the sea remain the two conditions that, each year, define the quality of the oil mill.
