Between Varenna and Perledo, in the province of Lecco, Azienda Agricola Gaiatto Massimiliano has, since the early 2000s, reclaimed eight hectares of abandoned olive groves on the terraces overlooking Lake Como. Over thirteen hundred trees—Frantoio, Leccino, Bianchera, Pendolino, and Maurino—now grow on these ancient slopes, where exposure to the lake tempers the climate and favors oils with low acidity and a high content of phenolic substances. These very parameters define the Laghi Lombardi DOP denomination, which protects the olive growing of the Lario region and establishes its identity. The company produces four distinct selections, each an expression of a nuance of the territory, in strict adherence to the disciplinary guidelines. The reclamation of the terraces is both an agricultural act and a safeguard of the landscape: without such care, the slopes would revert to forest, and with them, an olive cultivation long tied to the lake's shores would be lost.
