The trees belong to varieties from inland Lazio—Carboncella, Leccino, Frantoio, Pendolino—alongside ancient selections like Salviana and Rosciola, a genetic heritage that the company continues to cultivate. The harvest is pressed daily using only mechanical processes and cold extraction, to faithfully capture what the plant has ripened in the sun. The result is an extra virgin Sabina DOP with a yellow-green color streaked with golden reflections, recognizable for its velvety fruity notes and a slightly spicy aftertaste that becomes more vibrant in fresh extractions.
