The distinctive feature remains the preservation method stipulated by the denomination, the cluster drying (a "piennolo") that keeps the tomatoes hanging for months. This practice further concentrates the sweetness without extinguishing the acidity, establishing the contrast that makes the fruit a benchmark of Campanian cuisine.
